Cook 200g macaroni pasta in a large pot of salted water according to packet instructions. Cut 400g Swiss brown mushrooms in quarters. Saute mushrooms in a saucepan with a splash of oil and 1 tbsp butter until golden. Season and set aside (but don’t clean the pan). Start cheese sauce by melting 50g butter in the same pan and add 1/3 cup plain flour. Cook, stirring, for 1 min over medium-low heat. Gradually add 500ml milk, whisking until smooth.
